This guy I really like[&he likes me] calls me beautiful, cute, & gorgeous.
But I don't know what to call him...I mean I don't want to say hot because it's nothing compared to beautiful...& I don't want to call him handsome...

I sometimes tell my husband he's 'pretty'- it's a huge joke, and we both laugh about it. I also call him a sweetheart.

You could say he's gorgeous, sweet, luscious, or sweet. If you feel like being a bit funny, say he's dreamy... :P
