Does anyone know any cheap and easy vegetarian recipes? I'm a vegetarian. I'd like to mix up the food that I normally eat, and try something new, but I cant seem to find anything easy to make. I'm not that good at cooking, lol.

Above, it isn't vegan if it has cheese.

My fav recipie is Red Beans and Rice. This is a fancy version of the recipie that is good enough to serve to company.

1 lb dry small red beans
5 cups water
2 large or 4 small cubes of vegetarian boullion
1 to 1.5 cups of chopped celery
1 to 1.5 cups of chopped carots
1 to 1.5 cups of chopped onions
garlic to taste (I use 1/2 tsp of diced garlic since I like it)
some olive or other oil
liquid smoke
1 15 oz can diced tomatoes
1 c. salsa
salt and fresh ground pepper to taste

Soak small red beans overnight, then drain, rinse, and cook with 5 cups of water and boullion until nice and tender (I like to use a crock pot all day). remove some of the beans with a slotted spoon, mash them up, and then add them back to thicken broth to desired thickness.

In a large fry pan or Dutch oven (or any pan large enough if you have neigher) saute the veggies and garlic in a little oil until onions are transparent, then add beans with broth, tomatoes, salsa, salt and fresh ground pepper to taste and several shakes of liquid smoke. Bring to boil and simmer at least 20 minutes. While simmering cook the rice. Serve beans over rice. I usually make a double batch and freeze some in small containers for lunches.

Ingredients

1-1/2 tsps. olive oil
2 cloves garlic, minced
2/3 cup vegetable or chicken stock
1 lb. canned black beans, rinsed and drained
1/8 tsp. chili pepper flakes
2 Tbsps. pesto pasta dressing
6 oz. small shell pasta
3/4 lb. broccoli florets\cooked
2 Tbsps. grated Parmesan cheese

Instructions
Heat oil in a heavy nonstick skillet over medium high heat. Sauté
garlic 1 minute. Stir in stock, beans and chili pepper flakes.
Simmer 5 minutes or until sauce begins to thicken. Stir in pesto and
set aside. While sauce is cooking, cook pasta in boiling salted water
7 minutes or until almost tender. Add broccoli and cook another 4-5
minutes or until broccoli is almost tender and pasta is al dente.
Drain thoroughly. Transfer pasta and broccoli to sauce and toss until coated.
Season with salt and pepper to taste. Serve with Parmesan

vegan soup 1 oz of cheese/one can of mixed vegies/one can of carrots/1can of tomatoe sauce/spices you like/add all items in pan/when comes to boil add 1/2 cup of rice instant,boil til tender/stir every few minutes/add cheese/melt/eat while hot.

What kind of food do you cook now? There are so many vegetarian dishes it is hard to know where to start. I really like roasted root vegetable soup (pureed). I couldn't really tell you specific ingredient size but at least it will be a good template to work from.

Assorted root vegetables/squash (potato, carrot, etc) peeled and quartered
olive oil
kosher salt
black pepper
4 garlic cloves whole
chopped fresh herbs (sage, basil, thyme whatever ya got generally works and I enjoy letting my cooking change each time I make something)
cream (if vegan can sub coconut milk with a little curry and ginger and it tastes great)
vegetable stock/broth

It really is pretty simple. Combine the first six ingredients (save some of the herbs to use at the end if you want) in mixing bowl coating vegetables/squash/garlic generously with olive oil, salt and pepper. Bake in oven on 425 until tender (30 minutes maybe depending on oven and veggies). From there simply put veggies in blender with stock and cream and puree seasoning to taste. In this process there is a lot of room for experimentation. You can add anything you want at the end to spice it up (ginger, curry, fresh herbs, etc.) and you can try adding some white wine into the process. As well as make it a completely vegan dish with some simple substitutions. You could probably even do it raw as well. Stores easily if you want to make it ahead of time and just add water if you want to thin it out and reheat.
