You got to find the petrified wood in the Bayou at nighttime. It's hard to find but keep checking, it will be a silvery color.

Then, purchase a wood carving table from the guy at the market stand.

Then, carve the wood. It will probably make a bunch of other things first, like the 20th time or more it will make the chess piece. So what I did so I didn't have to keep finding the wood, was I'd save my game, then carve it and if it was something like a cowboy or potato, I'd exit the game without saving, then restart the game and carve it again until I got the chess piece. It took like 20 tries.
