Queso is Spanish for cheese Chili con Queso is Chili with Cheese, Salsa con Queso is Salsa with Cheese. So Queso is simply Cheese in Spanish!
For a little more in debth it was derived from the Latin word Caseus which was possible derived from the proto-Indo-European root *kwat-, which means "to ferment, become sour".
