I am a picky eater too, and I am a vegetarian. It has been close to one year. I actually think you eat more of a variety than me. (:
Being a vegetarian does not mean strictly eating fruits and veggies. I like the easy to make, organic, vegetarian foods. Go to your food store and look for brands like Amy's, Morning Star Farms, Boca, etc.
As for recipes, use the soy substitute for meat in recipes like Shepherds Pie. I recommend Morning Star Farms for that as well. It tastes a bit like the real thing!
As you grow more used to not eating meat, you can move on to wider varieties of foods.
Trust me, it isn't as hard as it seems. Start with substitutes, and don't worry about making complicated, showy veg recipes. Good luck!!

Simply a Rose to brighten your day,
And maybe lessen the cares in your way;
And also, too, to help you to know,
That in knowing you, many others grow!

Maybe you could try using salad dressings like Ranch on your vegetables. It really makes vegetables more enjoyable.

When I became a vegetarian I was pretty much a meat and potatoes kind of guy. I didn't like most vegetables. Back then I was working my way through college so I pretty much lived on raman noodles and cheap boxed macaroni & cheese dinners anyway.

Over time your tastes do change. Now I like all vegetables (though I'm still not big on raw bell peppers though they taste good to me cooked). Just keep trying foods including ones you never liked before; you may be surprised when you start liking some of them.

You don't list any legumes or grains. Do you like rice, beans or lentils? These foods are often the centerpiece of vegetarian meals much like meat is the centerpiece of meals for carnivores. It is pretty hard to sustain yourself on just fruits and vegetables. Pasta and polenta can be very nice with vegetable sauces.

Remember that vegetarianism is better for you, better for animals, and better for the environment. Good luck!
