Bratwurst is composed of pork, beef, and sometimes veal, so if you were to figure out the permutations of these three ingredients (which are undoubtedly used in varying proportions with varying spices), the possibilities are quite high.

Also, some people in America use chicken and turkey, and there are also loads of recipes for vegetarian bratwurst as well.
